Heat a large skillet over medium heat. Add 1 tablespoon of extra virgin olive oil and let it warm up for about 1 minute.
Add 1 cup of diced onions and 2 minced garlic cloves to the skillet. Sauté for 3-4 minutes until the onions are translucent and fragrant.
Add 1 lb of ground beef to the skillet. Cook, breaking up the meat with a spoon, until it is browned and fully cooked, about 5-7 minutes.
Drain any excess fat if needed. Then, add 1 tablespoon of tomato paste and stir well to coat the beef evenly.
Pour in 1 cup of low-sodium beef broth and season with 1 teaspoon of salt, 1/2 teaspoon of black pepper, and 1 teaspoon of dried oregano. Stir everything together.
Reduce heat to low and let the mixture simmer for 10 minutes to allow the flavors to meld.
For added flavor, sprinkle 1/2 cup of shredded cheddar or mozzarella cheese on top, cover the skillet, and let it melt for 2-3 minutes.
Serve hot with a side of rice, pasta, or mashed potatoes.
